"Wait, who is the chef again?" one of our companions teased. "Chef Giovanni Leopardi," our waitress cooed helpfully as she sailed past. Considering the enthusiasm and sheer frequency with which our host inserted the head chef de cuisine and proprietor into tableside conversation, it seemed as though we were in the presence of greatness.

After a few years at the Canoe Club, the owners of Elixir first took their talents to Maine and opened a French bistro before bringing the small-plate concept to the Upper Valley. Elixir Restaurant and Lounge opened earlier this year with the aim of combining artful, local food with New England musicians.

A little feel-good food may convince you that grease and mayonnaise can cure all ills. In search of such soulful satisfaction, we made a jaunt over to Quechee, Vt., home of such wonders as "the most spectacular river gorge in Vermont," the Cabot cheese factory shop and the miniature cows at the Fool on the Hill.

Contrary to popular belief, the tour buses to the Green are not brimming with crowds eager to ogle the most selective freshman class in Dartmouth history. Closer speculation will reveal that the charter coaches carry the telltale sign of fall: old people.

The term is finally winding down and for a good quarter of the campus's population, each dwindling day brings the bittersweet possibility of last chances. While some may prefer to savor the final Fried Chicken Monday at Food Court, we at the Dish encourage perhaps tastier tributes to the Upper Valley at large.

With temperatures mounting, it seems that spring has finally arrived. While some are starting to break out the seersucker, in this week's column, we are longing for a change in taste -- for spring (and, dare we say it, early summer) delectables!

Vermont usually summons stereotypical images of cows, maple syrup, glowing green mountains and liberals. Our recent foray into the Upper Valley's diner fare led us smack into the verdant peaks of New Hampshire's fair western cousin and did nothing to dispel this perception. We were drawn to the town of Bethel, Vt., which is most notably known for providing our nation's capital with its signature white granite.

Quick! What do a stump-toed ghecki, yards of astroturf and a past-its-Halloween prime princess costume all have in common? Why, West Lebanon of course! The Upper Valley's dizzying, cure-all one-stop shop can satiate any and all consumer desires. Although, the West Leb strip is not exactly overburdened with an equally ample array of fine dining selections, we remained convinced that it couldn't possibly fail us in our search for some solid grub.

Tucked away on a side street in Hartland, Vt., Skunk Hollow Tavern manages three distinct in-house settings, and caters to frat boys and families alike. The Tavern opens to a combined restaurant and bar scene whose low ceiling, exposed beams and jaunty fireplace foster a cozy but casual atmosphere. The upstairs dining room, albeit somewhat spartan, nonetheless emerges more refined thanks to the exchange of Christmas lights for formal table linens.

It may already be August, but we are not giving up on this term just yet. The Upper Valley still has plenty of hidden hotspots that continue to spark up summer even as the days start to dwindle. White River Junction's rapid transformations call for an expansion of our dining options and a welcomed rejuvenation of our palates. Tucked away in the town's "art colony" -- a collection of small studios in a one-time bread factory, the Tip Top Cafe salutes history with another culinary pursuit. The restaurant effortlessly shifts from a casual cafe by day to trendy bistro by night, providing patrons with two ways to enjoy its American-inspired cuisine. Our first attempt to sit at a Tip Top table left us without so much as a bad taste in our mouth. Apparently Mondays in White River are the new DDS Saturdays: everything seems to be closed.

As dining options dwindle and temperatures boil, our palates ache for a little bit of spice in the everyday routine. We took a cue from the warmer weather and went in search of some hotter cuisine, stumbling upon Lebanon's Gusanoz Mexican Restaurant. Nothing says summer like cold beer and cheap Mexican food.
